Established Derry city centre Hotel is seeking to recruit an experienced Sous Chef to take responsibility for operational procedures in absence of Head Chef.
Ideal candidate will have previous experience in capacity of Sous Chef or Senior CDP within a busy Restaurant/Hotel environment. Previous experience in Function work would be considered an advantage.
Main Duties:
- To plan menus in co-operation with the Head Chef, in order to achieve and maintain the budgeted food cost.
- To purchase or requisition supplies and ensure that these are properly issued, used and accounted for. To carry out food rotation procedures.
- To supervise kitchen staff in the cooking of dishes, giving technical advice and guidance when necessary.
- To personally prepare dishes and participate in all other activities taking place in the kitchen.
- To ensure that dishes are produced to the required standard of quality and attractiveness before serving.
- To deal with complaints about food if any.
- To instruct Trainees in food preparation and kitchen operations.
- To assist in the recruitment, training and development of all food production.
- To liaise with suppliers to ensure the supply and delivery of quality goods.
- To carry out stock takes as appropriate.
- To ensure compliance with Statutory and Company regulations with regard to health, safety, hygiene and fire.
- To maintain discipline of staff under your control.
- To continue own professional development.
- To promote and maintain good communication with all departments.
- To attend meetings when required.
- To apply the health and safety policy within your departments and ensure that day to day standards are maintained and observed by all staff under your control.
- To carry out any other duties that might reasonably be required.
The successful candidate will work an average of 40 hrs per week (5 out of 7 Days)
